After completing a PhD degree in Food Engineering at the University of Alberta, Canada, Vijay was involved in Food Science and Technology research and education in Victoria for the last 21 years. He has taught and researched Food Chemistry, Food Processing and Engineering and Food Analysis. He supervised number of PhD, Masters and Honours projects in Food Technology. He has also authored several scientific and industrial reports, research papers, and conducted training for food industry. His main research interests are in grains, fruits and vegetable, meat and poultry and fermented dairy products. His skills can be used in food process evaluation, improvement, troubleshooting, quality assurance, and product and process development. He is an active professional member of AIFST (Australia), IFT (US) and AACC (US).
