Roast cumin seeds on medium heat using a skillet till they start to release flavours
Cool and grind using a spice grinder - keep aside
Here are the ingredients (Amla berries, Ground cumin, sugar and salt)
Place a wok on the stove and add oil - heat until start to burn
Add Amla berries to the oil and cook on medium heat until fully softened. Keep mixing throughout the cooking process. This step could take 10-15 min.
Mash the cooked Amla berried (Seeds can be removed or left in the recipe)
Add sugar and keep cooking and turning Amla berries at low-medium heat. Keep mixing and turning with the spatula so that the Amla does not stick to the bottom
Heat until sugar dissolves and starts to caramelise - turn the stove to low heat
Add roasted, ground cumin and mix well
Transfer the chutney to a clean glass jar or made small candies
Enjoy the sweet and tangy Amla chutney - can be eaten as a snack as well
